I still remember the first time I tried this Caprese Salad recipe. We were at a friends house, and she had just returned from the local farmers’ market with the freshest tomatoes and basil. One after another caprese melted in my mouth until they were all gone. Besides the amazing flavor that comes from this recipe, my favorite part is how it makes you feel. As dumpy and sluggish as stuffing yourself with a fatty burger makes you feel, this recipe does the exact opposite – you feel clean and energized when you eat it. I hope you love it as much as we do.

Ingredients:
1 roma tomato
1 oz fresh mozzarella (any kind will do, but my favorite is Buffalo Mozzarella)
Handful fresh basil leaves
1 TBSP extra virgin olive oil
1 TBSP balsamic vinegar
cracked pepper
Slice the roma tomato into approx. 6 slices (just thick enough that they’re sturdy enough to pick up and pop in your mouth). Place a small slice of mozzarella on each tomato slice. Place a fresh basil leaf on each. Drizzle with extra virgin olive oil and balsamic vinegar. Crack pepper over the top to taste.
Then, pop in mouth one by one.
