I love this easy mango salad recipe so very much. If you’re one who doesn’t like the taste of greens, you will love this salad. It’s light and sweet, creamy and comforting. This salad is such a treat for me. I love it as a main dish or a side, either way. It’s delicious with grilled chicken breast on top, or without the chicken.
Ingredients
3 very ripe bananas
½ cup coconut milk
dash of nutmeg
4 peaches and/or nectarines, diced (optional)
2 mangos, diced
8 cups red leaf lettuce (about 2 large heads), torn into bite sized pieces.
1/3 cup slivered almonds
OPTIONAL: 12 oz grilled chicken breast or mahi mahi)
Directions:
Blend bananas, coconut milk and nutmeg in blender until thick and smooth. Arrange red leaf lettuce on 4 plates, top with peaches and mango, and drizzle in island dressing, and top with slivered almonds.

The main source of my kids’ leafy greens come from green smoothies. They just aren’t all that in to crunching salad greens. But this recipe is so good, even my 4 year old will eat it. He says it tastes like candy.
