For all you festive food lovers who are concerned about using food dye (with good reason), I have a fun, 3-course St. Patrick’s Day breakfast to share with you!

GREEN EGGS

One of my kids favorites, whether it’s St. Patrick’s Day or not, is green eggs. They’re so simple to make and what makes them green will give you a great deal of fiber and nutrients. Simply add as many eggs as your family needs to a blender. Then add a handful of spinach. Our family uses about 6 eggs, plus 1 heaping handful of spinach (about 2-3 loose cups). Pulse the mixture in the blender until it’s well combined and green. I let mine go for about 5-10 seconds, just til all the green chunks are gone.

Then, simply pour the green goo into a pan and scramble the eggs! These eggs look about as freaky as you would imagine green eggs to be. But they taste amazing! You can’t really taste the spinach, it just adds a creamier texture to scrambled eggs.

GREEN PANCAKES

You can do the same thing as above with any healthy pancake recipe. Simply prepare the pancakes as you normally would, then pour the batter into the blender and add a handful of spinach until it’s all green, then cook the pancakes as usual. Another thing you can do is grate zucchini into the pancake batter to make zucchini pancakes, but the green won’t be quite as rich in color this way.
