I have a great recipe for homemade pancake batter. It’s so easy to do and you can prepare it beforehand and just store it in the fridge to make pancake breakfasts easier and faster.
Ingredients:
- 3 cups blanched almond flour
- 1 TBSP baking soda
- 2 teaspoons cream of tartar
- 1 cup coconut flour
- 3/4 teaspoon sea salt
How To Make Health Pancakes:
Ingredients:
- 6 large eggs
- 1 cup Almond Milk or full fat coconut milk
- 2 cups Pancake Mix
- 1/4 cup melted ghee or coconut oil
- 1/4 cup coconut crystals or honey
- 1 teaspoon vanilla extract
- palm shortening (for greasing the pan)
Method:
Step 1: In a cast iron skillet or griddle over medium heat, add a palm shortening to grease the pan.
Step 2: Using a food processor or blender, add all ingredients in the order they were listed.
Step 3: Keep blending for 30 seconds until mixture is smooth. Occasionally using a spatula to scrape the sides.
Step 4: Pour 1/4 cup of batter per pancake onto the pan. Cook each pancake for about 2-3 minutes until bubbles appear on the surface and the sides lift easily. Flip and cook the other side for another 1-2 minutes.
Step 5: Repeat with the rest of the batter and constantly adding more palm oil if the pancakes begin to stick to the pan.
