I rarely eat chicken because I don’t like the taste of it, and because I don’t eat very much meat in general. But this healthy chicken recipe!! Oh my goodness, you must try it as soon as possible. This meal tastes like gourmet Italian take-out. Only it is way too easy to throw together to possibly be gourmet. You can make this dish in 20 minutes including prep time. You’ll love it. Your entire family will. I promise you will fall instantly in love with this dish and you’ll make it a “regular” in your home. Guaranteed. Or your money back. 😉

Ingredients

Extra virgin olive oil
2 cups cherry tomatoes, halved
1/2 cup fresh basil, chopped
1/2 cup shallot, chopped
1 lb. chicken breast
2 eggs
1/2 cup grated parmesan cheese

20 Minute Directions

Heat 1 Tbsp olive oil in a small skillet. Add the sliced tomatoes, basil and shallot and saute on low-med for about 10 minutes, stirring occasionally, while you prepare the following:

Start another skillet warming with 2 Tbsp olive oil. Crack 2 eggs in a mixing bowl and whisk for a couple of seconds. Chop raw chicken into 1 inch cubes, and add them to the egg mixture. Add the parmesan to a large Ziploc bag. Add the chicken to the bag in handfuls, allowing extra egg to remain in the mixing bowl. Quickly shake the bag until the cheese lightly coats the chicken. Dump the chicken from the bag into the oiled skillet.

Back on your tomato skillet. Use a wooden spoon to roughly mash up the tomatoes, so their liquid makes a thick sauce. Turn the heat to low. Continue to cook the chicken until done. Evenly divide chicken onto 4 plates, and top chicken with tomato basil mixture. Voila!
