Healthy meatloaf recipe! Okay, let’s be completely honest here. While you can make healthy foods taste pretty amazing… USUALLY the unhealthy version of a dish is a little bit tastier than the version with less sugar, salt, fat, etc.

Right? I mean, if we’re being perfectly honest.

And we are.

So BELIEVE me when I tell you that this healthy meatloaf is honest-to-goodness more delicious than it’s fattier, saltier, breadier (it’s a word NOW!) counterparts. Actually, it’s our family’s favorite meatloaf recipe.

Ingredients

1 tbsp olive oil
2 lbs. ground beef (shoot for less than 10% fat, or 90% lean or more)
3/4 cup onions, chopped
1 cup whole wheat bread crumbs
1 tsp dried oregano
1 tbsp dried horseradish
1 tsp dried mustard
1/2 cup ketchup (make your own, it’s much healthier!)
2 eggs, beaten

Directions

Preheat oven to 375F. Grease an 8×4″ loaf pan with olive oil. In a large bowl, hand mix beef, bread crumbs, onions, oregano, horseradish, mustard, ketchup, and eggs until well incorporated. Shape into a loaf shape and place in the pan. Bake for 1 hour and 15 minutes or until done.
