These healthy potato chips are so delicious and so easy to make! Sweet potatoes are nutritional power-houses. They pack more dietary fiber, healthy complex carbohydrates, protein, vitamins A & C, iron and calcium than most other veggies.

This recipe is a perfect side to any main dish. Grill up a healthy veggie burger (or lean meat burger) and top it with thick tomato and avocado slices and serve with these chips. Or, serve with some fruit as a snack for the kids.

Ingredients

2 sweet potatoes
favorite spices (see options below)

Directions

Preheat oven to 425 degrees. Scrub sweet potatoes, leaving skins on. Slice into 1/8″ slices. You can do this by hand, or use a plane slicer. I used a plane slicer with a crinkle cut attachment for the photo above, but they look and taste just as great without the crinkle.

Add spices to a large resealable bag, then add sweet potato slices. Seal bag and shake until spices evenly coat potato slices. Spread chips in one layer onto a baking sheet. Bake for 30 minutes, or until crisp. It may take longer than 30 minutes, depending on the amount of moisture in your potatoes. Once chips are crispy on the edges, use a spatula to loosen chips and shuffle them around on baking dish. Then, allow them to bake until they’re crunchy like potato chips. Shuffling halfway through will keep chips from being soft in some areas and overcooked in other areas.

Spice Options

There is no science to this, and it’s really hard to go wrong. For every 2 sweet potatoes, I use about 1 teaspoon of spices (total), to taste. Experiment with different flavors and be sure to let me know what you’ve tried by commenting!

Classic:
Sea salt and garlic powder

Savory:
Sea salt, onion powder and dill-LOTS of dill!

Spicy:
Sea salt, freshly ground pepper and cayenne

Sweet:
Cinnamon, nutmeg, Stevia powder
