This is a fun, healthy snack recipe for kids or adults. It can also be served as a side to any lunch or dinner. My family likes it because it adds a little unique flavor to such a classic snack. I think dill brings out sweet deliciousness on any vegetable. And the sesame seeds add just enough flavor depth. This recipe is a go-to for me because I can throw it together in about 30 seconds.
Carrots get a bad rap in the eyes of low-carb eaters that they frankly don’t deserve because of their high glycemic index. But all that means is that the natural sugar contained in carrots is released into the blood stream more quickly than foods lower on the GI index. It doesn’t, however, take into consideration how MANY carbs carrots have (very few). Conversely, a food can be very low on the GI index, which means the carbs are released slowly, which is good… but if there are tons of carbs, then that’s a problem. Just look at the whole picture before you go writing off a vegetable that packs super servings of Vitamins A, K and C and B6, not to mention tons of fiber!

Ingredients
1 cup baby carrots, or straight from the garden, scrubbed and chopped into bite-sized pieces
1 tsp sesame seeds (for even more flavor, roast them under the broiler in your oven for about 30 seconds or until fragrant)
1/4 – 1/2 tsp dried dill
dash sea salt
Directions
Toss it all together and serve!
