Sorry for the cell phone picture that I don’t feel does justice to this amazing healthy vegetable soup recipe. I just love this comforting soup. It keeps my husband happy because it’s meaty. It keeps my 4 year old boy happy because he thinks the turkey looks like brains. (He calls it Zombie Soup. That’s completely disgusting, I know. So sorry.)

This is a great fat burning soup! Cilantro helps regulate blood sugar and cholesterol. The beans are such a perfect macro-nutrient blend of protein, fat and carbs. And kale is a super-duper detox green. Kale absorbs many times its own weight in toxins.

Ingredients

2 medium onions, chopped
5-6 cloves garlic, pressed or chopped
2 lbs ground turkey
2 4 oz cans diced green chiles
2 15 oz cans diced tomatoes
6 cups vegetable or chicken broth
6 cups coarsely chopped kale
2 15 oz cans pinto beans, drained and rinsed (or use dry beans, pre-soaked and cooked)
1/3 cup chopped fresh cilantro
salt and black pepper to taste

Directions

Chop garlic and onion. Heat a couple tablespoons of broth in a large pot. Saute onion until onion just starts to become translucent (about 3-5 minutes). Add garlic and turkey. Break up the turkey into bite sized bits as it cooks. When turkey is almost cooked through, add the tomatoes, green chiles and broth. Turn heat up to medium-high. Meanwhile, chop the kale. When the soup begins to boil, add the kale, beans, spices, salt and pepper. Immediately reduce the heat to simmer for 10-15 minutes or until flavors have combined.
