My, oh, my. We LOVE these healthy Pepper Stuffed Burgers. They really are such great crowd pleasers. They taste like you marinated them overnight and then spent hours putting them together before grilling them to perfection. An you can go ahead and let your BBQ guests make that assumption. But the reality is, you’ll spend about 5 minutes chopping, 5 minutes sauteing, and 5 minutes stuffing. Just 15 minutes of prep! Then throw these babies on the grill for a few minutes on each side, and enjoy!

Ingredients
2 Tbsp extra virgin olive oil
1 small yellow onion
1/2 green pepper
2 lbs. lean ground beef
2 eggs, slightly beaten
3 Tbsp Worcestershire sauce
salt to taste
pepper to taste
1/2 cup natural ketchup
2 tsp fresh oregano (or 1 tsp dried)
1/4 cup feta cheese crumbles
Directions
Heat a medium skillet on medium, and add olive oil. Finely chop onion and green pepper and add them to the pan. Let cook, stirring occasionally, until tender. While onion and pepper are cooking, combine the beef, eggs, Worcestershire, salt and pepper. Mix it all together with a large fork, or you can mix with your hands as you would a meat loaf. Form meat mixture into 16 patties, 1/4 inch thick. It’s easiest if you do this on a flat baking sheet, for assembly. Spoon onion and pepper mixture onto the centers of 6 patties. Then add a bit of crumbled feta on top of the pepper. Sprinkle oregano over the feta. Squirt or spoon about 1 Tbsp of ketchup onto each of the 8 patties.
At this point, you have 16 patties, 8 of which have a pile of STUFF on top of them. Now cover the “stuff” piles with the remaining 8 patties. Pinch the sides securely closed. It’s as if you’ve made a little hot pocket out of hamburger meat.
The patties are now ready to be transferred to the grill. Be gentle with them… grill on each side until done. These are delicious served with a huge green salad and tomatoes. You’ll love these Healthy Stuffed Burgers.
