This is one of our favorite and hopefully one of many Pico De Gallo Recipes. It’s like combining two party favorites together to make them better.
Very quick to make, you simply chop, chop, and serve. Use your favorite healthy chips or slice a cucumber and use that as a chip. This recipe is pretty mild although you can spice it up with some jalapeno if you like some spice.

Ingredients
1 bag frozen cooked shrimp cocktail (1 pound)
1 red onion
1/2 can black olives
2 roma tomatoes
2 avocados
1 lime
1 cup cilantro
1/4 tsp garlic powder
1/4 tsp sea salt
Directions
Let shrimp thaw, or soak in room-temperature water while you prepare other ingredients.
Chop shrimp, onion, olives, tomatoes and avocados, or throw them all in a food processor to chop. You can chop them finely or coarsely, depending on your preference.
Transfer all chopped ingredients to a bowl.
Add garlic powder and sea salt and toss to combine.
If you have an hour or two before need serving this recipe, let this sit for a bit in your refrigerator. It will allow the cilantro and lime juice to set in and really bring out the flavor of all the ingredients. Whether you like shrimp or not the basics of this recipe can be used in other recipes.
