I can’t even tell you how much I love a recipe for homemade salsa… all kinds! I love traditional tomato based salsa, fruit-based salsas, all sorts of bean salsas, you name it. But lately this is hands down my favorite homemade salsa recipe. Let’s just say that I have been known to eat it straight with a spoon. For dinner. But it’s just as amazing the traditional way. You know, with chips and stuff.

Ingredients:
6 roma tomatoes – chopped
1 avocado – diced
1 small red onion – finely diced
1 can black beans – drained and rinsed
1 can white shoe peg corn
1/3 C chopped, fresh cilantro
juice of 2 limes
1 TBSP white wine vinegar
1 TBSP extra virgin olive oil
Combine all ingredients in bowl and serve. It’s smart to make this recipe a day in advance, because that gives the flavors a chance to mingle together in the fridge for a day and it’s absolutely delightful. (But if you don’t make it in advance, it’s still pretty amazing on day one.)
If you’re looking for a great salad recipe, look no further than this very salsa. Just dump it on a bed of fresh romaine lettuce and you’re good to go. You can add some shredded chicken, or leave it as-is. It’s so satisfying, you don’t even need salad dressing. Does it get any healthier than that?!

Woahhhh that was good!! You honestly have to be made out of stone not to eat the whole thing the same day but I promise myself next time I will try and save some for the next day to see how good it gets!
Oh and I just ate it straight with a spoon too. Why bother with chips??
