- Preheat oven to 450.
- Chop zucchini and/or yellow squash and put into large bowl.
- Drizzle avocado oil or melted butter over squash, just enough to coat
- Add mineral salt and pepper to taste
- Pour squash into roasting pan and spread it out evenly.
- Bake 15 to 20 minutes, stirring once until cooked through.
