This is one of my favorite summer salad recipes. It’s a unique spin on your typical fruit salad. Of course it’s refreshing and delicious to chop up any array of fruit and toss them together in a bowl, plain and naked. But this one adds a refreshing sauce, without added sugar or whipped cream. You’ll love the variation!
Ingredients
2 cups cantaloupe, chopped
1 cup strawberries, chopped
1 cup blueberries, chopped
2 kiwis, chopped
1 banana, sliced
1 cup honeydew melon
1 lime, juiced
1 tablespoon honey
1-2 teaspoons poppy seeds
dash of cinnamon (optional)
Directions
Combine cantaloupe, strawberries, blueberries, kiwis and banana in a medium sized serving bowl. Add the honeydew, lime juice and honey to your blender and pulse or purée until smooth. Add poppy seeds and cinnamon and lightly pulse until combined. Toss dressing with fruit. Chill for 2 hours before serving.
You probably won’t have leftovers, but if you do…
Save them in the fridge for the next morning, and make a fabulous green smoothie! Add a cup of this salad to your blender, along with 2 cups of spinach and 1/2 cup cauliflower (optional). Add 8 oz. water and a few ice cubes. Push the smoothie button and enjoy!
This looks delicious, can’t wait to try it!! How much will it make if I follow the amounts above? Just trying to decide if I should double it for 5 people.
Thanks!!
Paige
This makes about 7 cups, Paige… so it should serve your 5, with leftovers!
In this great scheme of things you actually get an A for effort. Where exactly you lost us was in your details. You know, people say, details make or break the argument.. And that could not be much more accurate right here. Having said that, allow me inform you exactly what did work. Your text is quite engaging and that is possibly the reason why I am making the effort to opine. I do not really make it a regular habit of doing that. Next, whilst I can easily notice a jumps in logic you come up with, I am not confident of how you appear to connect your ideas which in turn help to make the final result. For now I shall yield to your position but trust in the foreseeable future you connect your facts better.
