This is a really healthy take on a Thai lettuce wraps recipe that takes about 10 minutes to make. Ten minutes, people! First, let me tell you that if you like cauliflower even a little bit, you’ll love this recipe. If you hate cauliflower, you’ll be able to tolerate this recipe, and possibly even enjoy it. These wraps taste good on their own, but they taste really quite amazing with a drizzling of REAL FOOD Asian dressing. By “real food” I mean that every single ingredient in the dressing is a plant.

I have and will continue to post dressing recipes on Totally Healthy Recipes, but sometimes the convenience of a store-bought dressing is very tempting. I am so impressed with one brand of dressings. Not only are they made of 100% raw, vegan plant foods, but they taste like absolute heaven. The brand is called Sun Drenchers. Their “Asian Drenching” hands down beats anything P.F. Chang’s has ever dished out. It’s like the cherry on top of these wraps. You certainly don’t need this dressing before you make these wraps, but… I’m just saying.

Ingredients

1 head cauliflower
2 avocados
1/4 cup chopped peanuts
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp dried dill
1/4 tsp sea salt
1 head iceberg, romaine OR butter head lettuce

Directions

Chop, chop, chop the cauliflower or place in food processor until it’s very finely diced. Then do the same with the avocados, and stir the avocado and the cauliflower together in a large bowl. Add the peanuts and seasoning and mix until well-incorporated. Spoon cauliflower filling into lettuce leaves. Serve as-is or dip in a whole food Asian dressing.
