I added my personal tweak to this amazing Zucchini soup recipe several months ago and it has since become a favorite of mine. I love that I can throw it together in about 15 minutes and it’s ready to eat. I also love that the kids will eat it (even if they prefer to dip whole grain toast into it) and that leftovers are fabulous whether re-heated or CHILLED! It’s a great pick-me-up meal during Summer because it’s so very light and clean, and eating it makes you feel just that. Try it this week and let me know what you think!

Ingredients:

1 large zucchini for each person eating
1/4 cup raw cashews for each person
Bragg Liquid Aminos to taste (I do about 1 Tbsp per person)
1/4 tsp garlic powder per person
dash of high mineral salt

Directions:

Soak the cashews in a bowl of warm water for about 1 hour (or longer if you like). Chop and lightly steam the zucchini (leave them unpeeled for better flavor and more nutrients). Add all ingredients to your blender and blend until smooth. Serve warm immediately, or chill for 2 hours before serving… whatever floats your boat!

*NOTE* – If you are on a high-raw diet, you don’t need to steam the zucchini, but you will need a powerful blender such as a Blendtec, and you may need to add a little bit of water to get the right consistency.
